Equipment

  • Cast iron skillet or griddle
  • Spatula or burger press

Ingredients

For the Tacos

  • 1 lb ground beef 80/20 for best flavor
  • 4 small flour tortillas street taco size
  • 4 slices cheddar cheese or American cheese
  • 1/2 cup shredded lettuce
  • 1/4 cup pickles sliced
  • 1 tomato diced, optional
  • salt and pepper to taste

For the Smash Sauce

  • 1/4 cup mayonnaise
  • 1 tbsp ketchup
  • 1 tsp mustard yellow or Dijon
  • 1 tsp pickle juice
  • 1/2 tsp paprika optional

Instructions

  • In a small bowl, mix all sauce ingredients until smooth. Set aside.
  • Divide ground beef into 4 equal portions and roll into loose balls. Season with salt and pepper.
  • Heat skillet or griddle over medium-high heat. Place a tortilla on the hot surface, then top with one beef ball. Smash it down thin using a spatula or burger press to cover most of the tortilla.
  • Cook for 2–3 minutes until the beef is browned and crusty, then flip and immediately top with a slice of cheese. Cook another 1–2 minutes until cheese melts and tortilla is crisp.
  • Remove from skillet and top with shredded lettuce, pickles, tomatoes, and a generous drizzle of smash sauce.
  • Serve immediately while hot and crispy!

Notes

You can prep the smash sauce and toppings in advance to save time. For added heat, toss in a bit of hot sauce or sliced jalapeños!
