Ingredients

For the Tacos
  • 1 lb ground beef 80/20 for best flavor
  • 4 small flour tortillas street taco size
  • 4 slices cheddar cheese or American cheese
  • 1/2 cup shredded lettuce
  • 1/4 cup pickles sliced
  • 1 tomato diced, optional
  • salt and pepper to taste
For the Smash Sauce
  • 1/4 cup mayonnaise
  • 1 tbsp ketchup
  • 1 tsp mustard yellow or Dijon
  • 1 tsp pickle juice
  • 1/2 tsp paprika optional

Equipment

  • Cast iron skillet or griddle
  • Spatula or burger press

Method

  1. In a small bowl, mix all sauce ingredients until smooth. Set aside.
  2. Divide ground beef into 4 equal portions and roll into loose balls. Season with salt and pepper.
  3. Heat skillet or griddle over medium-high heat. Place a tortilla on the hot surface, then top with one beef ball. Smash it down thin using a spatula or burger press to cover most of the tortilla.
  4. Cook for 2–3 minutes until the beef is browned and crusty, then flip and immediately top with a slice of cheese. Cook another 1–2 minutes until cheese melts and tortilla is crisp.
  5. Remove from skillet and top with shredded lettuce, pickles, tomatoes, and a generous drizzle of smash sauce.
  6. Serve immediately while hot and crispy!

Notes

You can prep the smash sauce and toppings in advance to save time. For added heat, toss in a bit of hot sauce or sliced jalapeños!
