Main Ingredients
  • 2 pieces chicken breasts boneless, skinless
  • 1 packet ranch seasoning mix
  • 2 cups chicken broth low sodium recommended
  • 8 oz cream cheese cubed and softened
  • 1 cup grated parmesan cheese freshly grated preferred
  • 4 cloves garlic minced
  • 12 oz penne pasta or any pasta of choice
Optional Garnish
  • chopped parsley
  • extra grated parmesan

Equipment

  • Crock Pot or Slow Cooker
  • Mixing Bowl
  • Pot (for boiling pasta)

Method
 

  1. Place chicken breasts in the bottom of the Crock Pot. Sprinkle with ranch seasoning and minced garlic.
  2. Pour in chicken broth. Add cream cheese and grated parmesan cheese on top.
  3. Cover and cook on low for 4–5 hours or until chicken is cooked and tender.
  4. Shred the chicken using two forks and stir everything to combine into a creamy sauce.
  5. While the chicken finishes cooking, boil the pasta according to package instructions. Drain.
  6. Add cooked pasta to the Crock Pot and mix well. Let it sit for 5–10 minutes to absorb flavors.
  7. Serve hot, topped with chopped parsley and extra parmesan if desired.

Notes

You can use rotini, fusilli, or even spaghetti for this recipe. For extra richness, add a splash of heavy cream after shredding the chicken.
