Ingredients
  

Main Ingredients

  • 2 pieces chicken breasts boneless, skinless
  • 1 packet ranch seasoning mix
  • 2 cups chicken broth low sodium recommended
  • 8 oz cream cheese cubed and softened
  • 1 cup grated parmesan cheese freshly grated preferred
  • 4 cloves garlic minced
  • 12 oz penne pasta or any pasta of choice

Optional Garnish

  • chopped parsley
  • extra grated parmesan

Instructions
 

  • Place chicken breasts in the bottom of the Crock Pot. Sprinkle with ranch seasoning and minced garlic.
  • Pour in chicken broth. Add cream cheese and grated parmesan cheese on top.
  • Cover and cook on low for 4–5 hours or until chicken is cooked and tender.
  • Shred the chicken using two forks and stir everything to combine into a creamy sauce.
  • While the chicken finishes cooking, boil the pasta according to package instructions. Drain.
  • Add cooked pasta to the Crock Pot and mix well. Let it sit for 5–10 minutes to absorb flavors.
  • Serve hot, topped with chopped parsley and extra parmesan if desired.

Notes

You can use rotini, fusilli, or even spaghetti for this recipe. For extra richness, add a splash of heavy cream after shredding the chicken.
