Equipment

  • Muffin tin
  • Mixing bowls
  • Whisk

Ingredients

Main Ingredients

  • 6 cups cubed bread day-old or stale bread works best
  • 4 large eggs
  • 1 cup milk whole or 2%
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/4 tsp salt

Cinnamon Sugar Topping

  • 1/4 cup melted butter
  • 1/2 cup granulated sugar
  • 1 tsp ground cinnamon

Instructions

  • Preheat oven to 350°F (175°C). Grease a 12-cup muffin tin or line with paper liners.
  • In a large mixing bowl, whisk together eggs, milk, sugar, vanilla, cinnamon, and salt.
  • Add the cubed bread to the mixture and stir gently to coat all pieces. Let sit for 5–10 minutes so the bread soaks up the mixture.
  • Spoon the mixture evenly into the muffin tin, pressing down gently to compact.
  • Bake for 20–25 minutes, until golden brown and set in the center. Allow to cool slightly.
  • In a small bowl, mix sugar and cinnamon for the topping. Brush warm muffins with melted butter, then dip or sprinkle with cinnamon sugar mix.
  • Serve warm or store in the fridge for up to 3 days. Reheat before serving for best texture.

Notes

You can add mini chocolate chips, chopped nuts, or berries to the bread mixture for a twist! Great for prepping ahead of a busy week.
