- Preheat oven to 350°F (175°C) and lightly grease an 8x8 baking dish.
- In a mixing bowl, whisk together cottage cheese, applesauce, eggs, vanilla extract, and maple syrup until well combined.
- Stir in oats, baking powder, and cinnamon. Fold in the blueberries gently.
- Pour mixture into the prepared baking dish and smooth the top.
- Bake for 30–35 minutes, or until the center is set and edges are golden brown.
- Let it cool slightly before slicing. Serve warm or chilled.
Notes
Store leftovers in the fridge for up to 4 days. Enjoy it cold or warm it up in the microwave. Great topped with Greek yogurt or almond butter!
