  • 1 cup cottage cheese full-fat or low-fat
  • 1 cup unsweetened applesauce
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/4 cup maple syrup or honey
  • 1/2 cup rolled oats or quick oats
  • 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 1 cup blueberries fresh or frozen

Instructions
 

  • Preheat oven to 350°F (175°C) and lightly grease an 8x8 baking dish.
  • In a mixing bowl, whisk together cottage cheese, applesauce, eggs, vanilla extract, and maple syrup until well combined.
  • Stir in oats, baking powder, and cinnamon. Fold in the blueberries gently.
  • Pour mixture into the prepared baking dish and smooth the top.
  • Bake for 30–35 minutes, or until the center is set and edges are golden brown.
  • Let it cool slightly before slicing. Serve warm or chilled.

Notes

Store leftovers in the fridge for up to 4 days. Enjoy it cold or warm it up in the microwave. Great topped with Greek yogurt or almond butter!
