  • 1 cup unsweetened applesauce
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/4 cup maple syrup or honey
  • 1/2 cup rolled oats or quick oats
  • 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 1 cup blueberries fresh or frozen

Method
 

  1. Preheat oven to 350°F (175°C) and lightly grease an 8x8 baking dish.
  2. In a mixing bowl, whisk together cottage cheese, applesauce, eggs, vanilla extract, and maple syrup until well combined.
  3. Stir in oats, baking powder, and cinnamon. Fold in the blueberries gently.
  4. Pour mixture into the prepared baking dish and smooth the top.
  5. Bake for 30–35 minutes, or until the center is set and edges are golden brown.
  6. Let it cool slightly before slicing. Serve warm or chilled.
