Easy Chicken and Bell Pepper Stir-Fry

Ingredients
For the Stir-Fry

lb
boneless skinless chicken breast
sliced thinly

tbsp
vegetable oil
1
red bell pepper
sliced
1
yellow bell pepper
sliced
1
green bell pepper
sliced
2
cloves
garlic
minced
1
tsp
ginger
freshly grated
For the Sauce
3
tbsp
soy sauce
low sodium preferred
1
tbsp
oyster sauce
1
tbsp
honey
1
tsp
cornstarch
mixed with 1 tbsp water
Instructions
In a small bowl, mix together soy sauce, oyster sauce, honey, and cornstarch slurry. Set aside.
Heat vegetable oil in a large skillet or wok over medium-high heat.
Add the sliced chicken and stir-fry for 4–5 minutes until browned and cooked through. Remove from pan and set aside.
Add bell peppers, garlic, and ginger to the same pan. Stir-fry for 3–4 minutes until peppers are tender-crisp.
Return the chicken to the pan. Pour in the sauce and toss everything to coat evenly. Cook for 2 more minutes until the sauce thickens.
Serve hot over rice or noodles. Garnish with sesame seeds or green onions if desired.
Notes
For a spicier version, add red pepper flakes or a splash of sriracha. You can also swap chicken for beef or tofu!
