Heat a skillet or frying pan over medium heat and add olive oil. Crumble the chorizo into the pan and cook until browned, about 5–6 minutes, stirring occasionally.
While the chorizo is cooking, crack the eggs into a mixing bowl. Add milk (if using), salt, and pepper. Whisk until well combined.
