Ingredients
  

For the Chorizo and Eggs

  • 1 lb chorizo crumbled
  • 6 large eggs
  • 1/4 cup milk optional, for fluffier eggs
  • 1 tbsp olive oil or vegetable oil
  • 1/4 tsp salt to taste
  • 1/4 tsp black pepper to taste
  • 1/4 cup chopped cilantro optional, for garnish

Instructions
 

  • Heat a skillet or frying pan over medium heat and add olive oil. Crumble the chorizo into the pan and cook until browned, about 5–6 minutes, stirring occasionally.
  • While the chorizo is cooking, crack the eggs into a mixing bowl. Add milk (if using), salt, and pepper. Whisk until well combined.
  • Once the chorizo is cooked, reduce the heat to low and push the chorizo to one side of the skillet. Pour the egg mixture into the empty side and scramble gently until just set, about 2–3 minutes.
  • Mix the eggs with the chorizo and cook for another minute or two until fully combined and the eggs are cooked through.
  • Serve hot, garnished with chopped cilantro if desired. Enjoy with warm tortillas or toast!

Notes

This dish can be customized with toppings like cheese, avocado, or salsa. Add a side of fried potatoes for an extra filling meal!
