Ingredients
Fresh Spring Rolls

Chicken Satay Skewers

chicken breast
cut into strips

coconut milk

red curry paste

brown sugar
wooden skewers
soaked in water
Instructions
For Fresh Spring Rolls:
Soften rice paper wrappers in warm water one at a time.
Place shrimp, carrots, cucumber, and mint in the center. Roll tightly, tucking in the sides.
Serve with sweet chili sauce or peanut dipping sauce.
For Chicken Satay:
In a bowl, mix coconut milk, red curry paste, and brown sugar. Marinate chicken strips for at least 15 minutes.
Thread chicken onto skewers. Grill on a hot pan for 2–3 minutes per side or until fully cooked.
Serve with a classic Thai peanut sauce.
Notes
Customize your appetizers by adding fresh herbs like cilantro and Thai basil. Serve everything with lime wedges for a refreshing touch!
