Ingredients
  

Fresh Spring Rolls
  • 8 rice paper wrappers
  • 1 cup shredded carrots
  • 1 cup thinly sliced cucumber
  • 1/2 cup fresh mint leaves
  • 1/2 cup cooked shrimp halved lengthwise
Chicken Satay Skewers
  • 1 lb chicken breast cut into strips
  • 1 cup coconut milk
  • 2 tbsp red curry paste
  • 1 tbsp brown sugar
  • wooden skewers soaked in water

Equipment

  • Mixing bowls
  • Frying Pan or Wok
  • Mortar and Pestle (optional)

Method
 

  1. For Fresh Spring Rolls: Soften rice paper wrappers in warm water one at a time.
  2. Place shrimp, carrots, cucumber, and mint in the center. Roll tightly, tucking in the sides.
  3. Serve with sweet chili sauce or peanut dipping sauce.
  4. For Chicken Satay: In a bowl, mix coconut milk, red curry paste, and brown sugar. Marinate chicken strips for at least 15 minutes.
  5. Thread chicken onto skewers. Grill on a hot pan for 2–3 minutes per side or until fully cooked.
  6. Serve with a classic Thai peanut sauce.

Notes

Customize your appetizers by adding fresh herbs like cilantro and Thai basil. Serve everything with lime wedges for a refreshing touch!
